Sweet Pumpkin Soup

Serves: 5-6 bowls

Ingredients:

​500 grams sweet pumpkin
-
1/2 onion chopped
-
6 cloves garlic
-
20 black pepper
-
1 bay leaf
-
1 tbsp butter
-
1/2 cup milk
-
water
-
1 tsp red chilli flakes
-
2 tsp italian seasoning
-
salt (as per taste)

Instruction:
-
Take a pan or cooker and heat the butter.
-
Add bay leaf, black pepper and fry till it turns aromatic.
-
Add chopped onion, garlic cloves and saute till soft.
-
Further add chopped sweet pumpkin and fry for about 2mins .
-
Add one glass water, salt and pressure cook for 2 whistles.
-
Release the pressure, strain the water and keep it aside.

Let the vegetables cool completely.

Transfer the cooked vegetables to a mixing jar and blend to a fine paste.

Transfer the grinded paste to a pan or cooker, add milk, water and adjust the consistency .

Add red chilli flakes, italian seasoning and stir in well.

Get the soup to a boil allowing all the flavours to combine well.

Turn off the flame and serve hot.

9. Transfer the grinded paste to a pan or cooker, add milk, water and adjust the consistency .

10. Add red chilli flakes, italian seasoning and stir in well.
11. Get the soup to a boil allowing all the flavours to combine well.
12. Turn off the flame and serve hot.
