Mint Masala Baby Aloo

Cooking Time: 30 mins - 40 mins

Serves: 3-4 people

Ingredients:

For pressure cooker:

  • 300 gms baby potatoes

  • 1/2 tsp salt 

  • water 

For grinding:

  • 2 handful mint leaves

  • 1 handful coriander

  • 8 cloves garlic

  • 10 green chillies

  • 1 tsp lemon juice

  • salt (as per taste)

For frying:

  • 2 tbsp oil 

  • 1/2 tsp mustard seeds

Instruction:

  1. In a pressure cooker boil the baby potatoes with salt and water for two whistles.

  2. Release the pressure and peel the skin of the potatoes and set aside.

  3. In a mixing jar, add mint leaves, coriander, garlic, green chilly, lemon juice and salt. 

  4. Grind it to a coarse paste and set aside.

  5. Add oil to a heated pan and splutter mustard seeds.

  6. Add the boiled potatoes and fry till it starts to turn golden brown.

  7. Add the grounded paste and give a nice mix.

  8. Fry this mixture for about 3 mins and turn off the flame.

  9. It tastes great when served with steamed rice, chapathi or seperately even as a evening snack.
