Jowar Flour / Jolada Hittu Ambli

Recipe card for Jowar Flour / Jolada Hittu Ambli:

Preparation Time : 5 mins- 10 mins 

Cooking Time: 25 mins - 30 mins

Serves: 4 bowls

Ingredients:

  • 1.5 cup Jowar flour

  • 2.5 cup water

  • 2 cup curd

  • 12 green chilly slit

  • 8-10 curry leaves

  • 2 big onion chopped 

  • 2 tbsp fresh coconut

  • 2 tbspcorriander 

  • 2 tsp lemon juice 

  • 4 tbsp oil  ( 3 for frying and 1 for roasting nuts)

  • 1 tsp mustard seeds 

  • 1 handful groundnuts

  • 1 tsp urad dal

  • 1 tsp channa dal

  • 3 tsp ghee

Instruction:

  1. Take a kadai and dry roast the jowar flour for about 3 mins till it turns aromatic . 

  2. Completely cool it down and transfer to a mixing bowl.

  3. To this add salt, water and mix well with leaving no lumps.

  4. Add to lemon juice to the flour mix and combine well.

  5. Take a kadai, heat the oil and splutter the mustard seeds.

  6. Add curry leaves, green chilly and fry them .

  7. Add chopped onions and fry them on a low flame till translucent and soft.

  8. After this add the flour mix, curd and stir well.

  9. Do not stop stirring else the there will be formation of lumps.

  10. Boil for about 8 mins till it thickens well.

  11. Check the video for the consistency.

  12. Once boiled add fresh coconut, coriander, mix well and turn off the flame.

  13. Take a small kadai and heat the oil.

  14.  Roast the groundnuts, urad dal and channa dal till they become crunchy.

  15. Add the nuts into the ambli and give a nice mix.

  16. Serve the ambli hot with a spoon of ghee.
