Roasted Besan Bonda
Recipe card for Roasted Besan Bonda:
Preparation Time : 10 mins - 15 mins

Serves: 25 bondas

Ingredients:
​
​ For Flour Mix:
-
​1 cup besan/ gram flour
-
4 cloves garlic crushed
-
1 inch ginger grated
-
1 pinch hing
-
1/4 tsp baking soda
-
1 tsp green chilly paste
-
1 onion chopped
-
1 tsp coriander
-
1 tsp cumin seeds/ jeera
-
1/4 tsp sugar
-
water (for mixing)
-
salt (as per taste)

For Curd Mix:
-
1 cup curd
-
4green chilly chopped
-
1 tsp coriander
-
1 pinch hing
-
salt (as per taste)
For chilly mix:
-
1/2 tsp green chilly paste
-
1.5 tsp lemon juice
-
salt (as per taste)
-
2 tsp water
-
boondi (for topping)
Instruction:
-
Take besan or gram flour in a mixing bowl and add jeera, soda, hing, garlic, ginger, coriander, green chilly paste, sugar, salt ,onions .
-
Add water and mix well to make sure the batter is lump free.

Check the video for consistency and set it aside for 10 mins.

Chilly mix : take a bowl, add green chilly paste, lemon juice, salt, water and stir in well .

Curd mix: Take a mixing bowl, add curd, coriander, green chilly, hing, salt and stir well, keep it aside.

Heat the paddu pan and add some oil.
-
Pour in the batter and add some oil on top, roast well.
-
After 2-3 mins flip it over and roast the other side.
-
You can remove it after another 2-3 mins
-
These roasted bondas can be had directly with the chilly mix for those who prefer spicy food.

For curd bondas: dip the bondas in the curd mix prepared earlier and leave for only 5-7 mins .

Top with some crunchy boondi and is ready to serve
