Sweet Corn Rice

Recipe card for Sweet Corn Rice:

Preparation Time : 15 mins 

Cooking Time: 35 mins - 40 mins

Serves: 4 persons

Ingredients:​

  • 3 cups sweet corn 

  • 1 big roughly chopped onions 

  • 1 big diced tomatoes

  • 1 handful mint/pudina leaves chopped

  • 1 tbsp coriander chopped

  • 2 tsp ginger garlic paste 

  • 10 green chilly slit

  • 1 tsp mustard seeds

  • 2 tsp coriander powder 

  • 1/2 tsp garam masala

  • 1/2 tsp cumin powder 

  • 1 cup cooked basmati rice

  • salt (as per taste)

  • 12-14 cashew halfs

  • 2 tbsp oil (for frying)  

  • 1 tbsp ghee

Instruction:

  1. Take a kadai and heat the oil and ghee.

  2. Add the mustard seeds and let it splutter.

  3. Add green chilly, coriander leaves, ginger-garlic paste, onions and saute till soft. 

  4. Add corn, tomatoes and saute till they are mushy.

  5. Further add coriander powder, cumin powder, garam masala powder and mix well.

  6. Once the flavours have mixed well and turn aromatic, add on pudina leaves and saute for a minute.

  7. Add some salt, cooked basmati rice and mix well.

  8. Top it up with some roasted cashews and serve it hot.
