Sweet Corn Rice

Serves: 4 persons

Ingredients:​

3 cups sweet corn
-
1 big roughly chopped onions
-
1 big diced tomatoes
-
1 handful mint/pudina leaves chopped
-
1 tbsp coriander chopped
-
2 tsp ginger garlic paste
-
10 green chilly slit
-
1 tsp mustard seeds
-
2 tsp coriander powder
-
1/2 tsp garam masala
-
1/2 tsp cumin powder
-
1 cup cooked basmati rice
-
salt (as per taste)

12-14 cashew halfs
-
2 tbsp oil (for frying)

1 tbsp ghee

Instruction:
-
Take a kadai and heat the oil and ghee.
-
Add the mustard seeds and let it splutter.
-
Add green chilly, coriander leaves, ginger-garlic paste, onions and saute till soft.

Add corn, tomatoes and saute till they are mushy.
-
Further add coriander powder, cumin powder, garam masala powder and mix well.

Once the flavours have mixed well and turn aromatic, add on pudina leaves and saute for a minute.

Add some salt, cooked basmati rice and mix well.

Top it up with some roasted cashews and serve it hot.

Method:
