Ridge Gourd/ Heerekayi/ Beerakaya
Skin/Peel/Potu Pudi
Recipe card for Anjur Malai:
Preparation Time : 10 mins
Cooking Time: 20 mins - 25 mins
Serves: 1 cup

Ingredients:
-
2 ridge gourd skin/peel
-
1 tsp mustard seeds
-
2 tsp cumin (1 tsp for grinding and 1tsp for frying)
-
5-6 cloves garlic
-
6-7 green chilly
-
2 tbsp fresh coconut
-
10-12 curry leaves
-
1/2 tsp turmeric
-
salt as per taste
-
3 tsp oil

Instruction:
-
Take a mixing jar and grind the following: green chillies, curry leaves, jeera, fresh coconut, garlic and salt.

Grind coarsely and then add the skin of the ridge gourd.

Grind it to coarse powder again and keep it aside.
-
Take a kadai, heat the oil and add mustard seeds and cumin,let it splutter.

Add turmeric and grounded powder, fry it on low flame.
-
Add hing and mix well.
-
Fry the powder well until the moist is completely gone .

Ridge Gourd skin powder is ready and can be served with hot steamed rice and ghee.
Method:
