Lemon Coriander Soup

Ingredients:

1 carrot finely chopped
-
10 beans finely chopped
-
1/2 capsicum finely chopped
-
1/2 onions finely chopped
-
1 inch ginger finely chopped
-
6 cloves garlic finely chopped
-
3 green chilly finely chopped
-
1 tbsp coriander stalk/stem finely chopped
-
1/4 cup sweet corn
-
1 tbsp coriander leaves
-
1 tsp pepper powder
-
1 tsp lemon juice
-
3 tbsp corn flour
-
salt(as per taste)
-
1 tbsp oil
-
water

Instruction:
-
Heat oil in a saucepan and fry ginger, garlic and green chilly till the raw smell is gone.

Add the chopped coriander stalk and onions and fry till transulent.

Add all the veggies in the following order: beans, carrot, capsicum and fry for 5 mins till the rawness disappears

Add the the sweet corn and saute for about a minute.

Add in the water and get it to a boil.

Now add in the cornflour slurry and stir continuously.

Add sugar and boil for 5 mins.

Atlast add the pepper powder, salt and lemon juice and give a nice mix .

Turn off the flame and serve hot.
